Shortbread Cookies
Shortbread cookies are not only a Christmas staple, they are also surprisingly easy to make. This traditional recipe is a great alternative to the super sweet goodies we love to eat during the holidays. With only 5 ingredients, you don’t need to make an extra trip to the supermarket!
Classic Shortbread Recipe
- Mix together 2 ½ to 3 cups all-purpose flour and a pinch of salt in a bowl and set aside.
- Cream together 1 cup unsalted room temperature butter, 1 teaspoon vanilla extract and ½ cup powdered sugar until light and fluffy.
- Add the flour and salt mixture a small amount at a time, kneading into creamed mixture with your hands until the dough is stiff enough to be rolled. Do not overwork the dough!
- Turn dough onto a floured surface and pat or roll out to ¼ inch thickness. Cut into preferred shapes and place on an ungreased cookie sheet. Bake at 325° for approximately 15 minutes or until golden brown. Cool and store in airtight containers. Yields about 3 dozen cookies.
